Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt or sour cream

Optional Additions:

  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. You can use an electric mixer or do it by hand with a wooden spoon.
  4. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next one. Stir in the mashed bananas and vanilla extract.
  5. Gradually add the dry ingredients to the banana mixture, alternating with the yogurt or sour cream. Start and end with the dry ingredients. Mix until just combined. Do not overmix.
  6. If desired, fold in the chopped nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center comes out clean. The baking time may vary, so start checking around the 50-minute mark.
  9. Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Slice and serve the banana bread. It can be stored in an airtight container at room temperature for a few days or in the refrigerator for longer freshness.
